INGREDIENTS
4 boneless/skinless chicken thighs
1 pkg of broccolini
1 pkg 90-Second Jasmine Rice
1/3 cup of low sodium soy sauce
1½ cups of barbecue sauce
1 cup of DOLE® Pineapple Chunks
½ cup of DOLE® Pineapple Juice
1 Tbsp garlic powder
1 Tbsp onion powder
½ tsp salt
½ tsp black pepper
DIRECTIONS
Instructions:
1. Cut chicken thighs into cubes (Wash with vinegar and water)
2. Season with garlic powder, onion powder, salt, black pepper.
3. Marinate seasoned meat in barbecue sauce, pineapple juice and soy sauce for 3 – 5 minutes.
4. Pan sear meat for 5 – 10 minutes or until temperature is at 165°.
5. Add pineapple chunks to cook meat (Stir for 3 minutes).
6. Cook rice in Microwave (90 seconds)
7. Season with onion powder. Steam broccolini for 3 – 5 minutes.
