INGREDIENTS
1lb Chicken Tenders
8 oz. can DOLE® Pineapple Chunks
¼ cup Soy Sauce (low sodium)
1 cup Honey
1 tbsp Garlic, minced
1 tbsp Salt
1 tsp Pepper
½lb fresh Green Beans
1 Chopped Scallion (garnish)
DIRECTIONS
Coat a skillet with 2 tbsp of olive oil and heat over medium high. Season chicken tenders will salt and pepper, place in skillet and cook 6 minutes on each side or until cooked through. Use a thermometer to check the temperature of chicken. Temperature should be 165 degrees Fahrenheit.
In a mixing bowl add honey, minced garlic, soy sauce and pineapple chunks and mix together. Add Chicken and toss in honey pineapple soy mixture.
In a separate skillet add 2 tbsp of olive oil on medium high heat. Add green beans and season with salt, pepper and mixed garlic. Cover for 6 minutes to allow green beans to soften.
To serve, divide green beans among 3 plates and place beans in the center. Add honey pineapple chicken on top. Garnish with chopped scallion.
